Behind Every Recipe Lives a Story
Growing up in a West Indian household, food was always what brought the family together. My mom would spend hours in the kitchen making all sorts of mouth-watering foods — usually with whatever was in the cabinets and pantry. I loved to eat then, and I love to eat now. So cooking was more for survival (good food survival, that is).
I hope to preserve the essence of these memories with my cookbook — a compilation of perfected recipes, loved and shared throughout the years, from my family to yours.

What’s Cooking
Trained in modern kitchens but raised on his mother’s pirogues and his grandmother’s crab backs, Chef Prince brings a third perspective to Desire Food: the cook who learned the classics by heart and now puts his own spin on them. Plating, technique, seasoning sequences, fire — he’s not replacing what came before him, he’s adding to it.
His signature dishes lean into bold flavors and clever twists: salmon muffins that turn leftovers into a centerpiece, foil-pouch steamed salmon with pineapple and craisins, and his now-famous oven roasted salmon with the secret seasoning sequence (salt first, then granulated, then flaky — trust the order).
