Ingredients
- Ripe plantains: 4, peeled
- Bacon: 4 strips, chopped
- Cornstarch (St Vincent arrowroot): 1 teaspoon
- Breadcrumbs: 4 tablespoons
- Cheddar cheese, grated: 4 tablespoons
- Cinnamon powder: 1 teaspoon
- Angostura bitters: 1 teaspoon
Instructions
Cut the plantains lengthwise into halves. Scoop out the inner centre portions of each plantain half. Brush the centres with oil.
Purée or mash the scooped-out plantain to a pulpy mixture, then add the bacon, cornstarch, breadcrumbs, cheddar cheese, and Angostura bitters. Reserve the cinnamon for the top.
Fill the hollowed-out centre of each plantain with this mixture, making the filling rounded.
Sprinkle the top with the cinnamon powder.
Bake at 400°F for 15 minutes. Serve hot.
