Plantain Pirogues

Ripe plantains hollowed out like little Caribbean canoes, then filled with a savory-sweet bacon and cheese mixture finished with a dusting of cinnamon.

Cut the plantains lengthwise into halves. Scoop out the inner centre portions of each plantain half. Brush the centres with oil.

Purée or mash the scooped-out plantain to a pulpy mixture, then add the bacon, cornstarch, breadcrumbs, cheddar cheese, and Angostura bitters. Reserve the cinnamon for the top.

Fill the hollowed-out centre of each plantain with this mixture, making the filling rounded.

Sprinkle the top with the cinnamon powder.

Bake at 400°F for 15 minutes. Serve hot.
