Joan Prince — known to family, friends, and now to you as The Caribbean Princess — is the bridge between generations.

She grew up beside Mommie Helen at the stove, learning by feel and by memory the way Caribbean cooking has always been taught. But she did something her mother never did: she wrote it down. Decades of notes, sketches, measurements, and side comments became the cookbook that this website is built from.

Her cooking is faithful to its roots but never afraid to evolve. She’ll tell you exactly how Mommie Helen made the spinach cakes — and then tell you how she makes them a little differently now, and why. She holds the tradition lightly enough to keep it alive.

Today, the Caribbean Princess is the heart of Desire Food. The recipes are hers. The voice is hers. The love poured into every pot is hers.
