Golden-brown pumpkin fritters with crispy edges and a tender, sweet interior. A beloved Caribbean side that doubles as a perfect snack or dessert.
Ingredients
- Fresh pumpkin: 1 lb
- Eggs: 2
- Sugar: 4 tablespoons
- Flour: 5 tablespoons
- Butter or margarine: 1 tablespoon
- Cooking oil: ½ cup
Instructions
Peel off the skin of the pumpkin. Cut it into pieces about 2 inches square or similar.
Place pieces in a pot with water to cover and cook until tender. Remove from the fire, then pour off the water.
Crush the cooked pumpkin in a mixing bowl. Add sugar and stir. Add butter and stir. Add eggs and stir. Add flour slowly while continuing to stir.
Heat oil in a shallow skillet or frying pan. Drop one spoonful of the mixture at a time into the hot oil until the pan is comfortably full.
Turn the fritters over to fry on the other side, and remove when golden brown in colour. Serve warm.
